Last night at one of my favorite restaurants, Roy's, I brought along the following three d'Aupilhac wines to share with the GM and some of the restaurant staff.
1994 Domain d’Aupilhac Rose
This wine was nothing short of amazing and easily may have been the wine of the night, by a, um..nose. In some regards, GM Adam Flirl and I both thought it had taken on a quality not unlike Pinot Noir. It was magnificent. The color was a copper like rose/red, with aromas of the Garrigue. The flavors were still very intense with the most noticeable being raspberry and blueberry. One of the restaurant's guest who came in later in the evening owns a winery near by in Temecula, could not believe the wine was a 1994, nor did the anyone. Great work by Sylvain Fadat.
1993 d'Aupilhac Coteaux du Languedoc, Montpeyroux
This wine is at clearly at peak and should be enjoyed over the next two years. The aroma of “la Garrigue” was also most obvious, as the wine had flavors of grape jam, black raspberry, thyme, lavender, and a silky lingering finish. As it opened the wine revealed flavors of Oriental tea and a cigar box like bouquet. A very good wine and dead on the mark for a 10 year old Languedoc.
1993 Aupilhac Le Carginan VDP Mont Baudile
The wine had the palate weight and feel of a fine Bordeaux. The aromatics of the wine included tobacco leaf, but was different than the Coteaux du Languedoc. This was a more refined wine and had more fruit in the middle, with flavors of blackberry, thyme, rosemary, black pepper. The wine is very enjoyable and can age another 2-3 years without worry. Super effort.
